How you need to spend your 8 days in Canada how many days you need to spend in each city and more. I assume you got a week off. You will fly on Saturday and go back your home next Sunday.

I'll be straightforward here. If you're short on time, say less than a week, or if you're not keen on a lot of driving, and you have to skip one city, it could be Toronto. If you've experienced the likes of New York or London, Toronto might not leave you awestruck. Don't get me wrong, it's a lovely city - modern, metropolitan, and full of life. However, it didn't give me that 'wow, it's Toronto!' feeling. It's a nice city, but that's about it, in my experience.
Day 1 (Sunday):
Niagara falls

Day 2 ( Monday ):
Flatiron Building
Union Station Toronto
CN Tower
Polson Pier Skyline Viewpoint
After soaking in the views of Toronto, you could set off for Montreal, which is about a 5 and a half hour drive away. If the journey seems too long for one day, consider breaking it up. You could stop and stay overnight somewhere midway, reducing your driving time the next day. This way, you won't have to cover the entire distance in one go and can enjoy a more relaxed trip.
Day 3 ( Tuesday ):
Since this is the next day of the long trip. I want to keep this light day. But I think you can still visit couple locations.

Day 4 ( Wednesday ):

The Montreal Museum of Fine Arts
Old Montreal ( Most of the locations in the Day 3 in the Old Montreal however if there is any location or street you didnt pass I think you can just hangout in the Old town for couple more hours )
Day 4 ( Thursday ):
You can drive to the Quebec city on this day. It is around 2 and half hour driving. I think you still have energy to walk aroun so I want to mention couple locations.

Day 5 ( Friday ):

Day 6 ( Saturday ):

Your return flight might be from Toronto, so you'd need to start your drive back from Quebec on this day.
